Raw honey — comes straight from the hive and is available in filtered or unfiltered forms. Regular honey — pasteurized and may contain added sugars. Pure honey — pasteurized but contains no added ingredients.
Depending on which type of flower nectar the bees gathered, the honey can range anywhere from nearly colorless to dark brown. For example, buckwheat honey is dark and full, while orange blossom honey is lightly colored and sweet.
Natural, properly preserved honey will not expire. Because of the sugar content and low pH of honey, as well as the bees' honey-making process, organisms that can spoil food won't survive in honey. But honey has to be natural and sealed properly to enjoy its long lifespan.

Turns out, some of the honey that you'll find on grocery store shelves is not actually real honey. It's a product of an unethical yet widespread practice called “honey laundering.” Let us explain.
The Water Test: This is a test using water to spot impure honey. Simply fill a glass of water and add a teaspoon of honey into the glass. Adulterated or impure honey will easily dissolve in water and you will see it around the glass. On the other hand, original honey will settle right at the bottom of the glass.
Honey. In its most natural, raw form, though, honey is chock-full of toxins, and they very well may kill you. More than just one teaspoon of unpasteurized honey could be fatal. The toxins, called pyrrolizidine alkaloids (PAs), can cause liver damage and are suspected to lead to cancer.

Honey is higher in fructose than glucose. Fructose is sweeter than glucose, so you may be able to use a smaller amount of honey in your food or drink without sacrificing sweetness. The trace amounts of vitamins and minerals found in honey may also have added health benefits.
The Antioxidants in It Are Linked to Other Beneficial Effects on Heart Health. Again, honey is a rich source of phenols and other antioxidant compounds. Many of these have been linked to a reduced risk of heart disease ( 8 ). They may help the arteries in your heart dilate, increasing blood flow to your heart.
