Is there a simpler way to switch between 5.1 surround and Stereo for my headphones?

Dolby Digital is compressed so PCM is better. Dolby True HD, DTS HD MA, Atmos and DTS X are also lossless, so should be similar quality to PCM. If the source audio is stereo, it should only be coming from your front left and right speakers unless you use an up mixer.
If you set the TV's Settings->Sound->Digital Audio Out to Auto, and pass Dolby Digital 5.1 to the TV, you should be getting 5.1. Turn off any special processing of stereo on the soundbar, then toggle [Digital Audio Out] between Auto & PCM and see if you can hear a difference.

Sounds like either a speaker calibration problem or the front speakers are a whole lot better than the center. It could also be that a particular movie is mixed with too much coming from the center channel. But over-all, movies in DD 5.1 should almost always be better than stereo.
