Raw ginger prices are ruling at ₹45-52 a kg at present, almost 136 per cent higher than ₹17-22 a kg, the same time last year. Nearly 10 per cent of India's production of 1.5-2 mt is converted into dry ginger, which is estimated to be close to 1.9 lakh tonne. A large share of dry ginger is exported.
If you are buying ginger from a store, soak the rhizomes in water overnight because they are sometimes treated with a growth retardant. Plant the rhizomes 6 to 8 inches apart, 2 to 4 inches deep, and with the growth buds pointing upward. They can be planted whole or in smaller pieces with a couple of growing buds each.

Flat land with little or no slope is recommended. Bed preparation can be done by use of a tractor or it can be manually done, using a spade or a hoe. Planting is done mostly on raised beds when the rains must have stabilised i.e. May-June. Planting distance of 30 cm x 50 cm is often adopted for turmeric planting.

Organic ginger and young/green ginger—harvested early—are considered premium commodities. In the United States, both Chinese and Japanese ginger are grown in Hawaii and shipped to the mainland, though the majority of U.S. supply is imported from China, Brazil, Thailand, and Central America.

Before 2018, a kg of ginger was going for US$0.12 in 2015 and US$0.12 in 2017.
