Good news: Rotisserie chicken is actually pretty healthy.According to Abby Sauer, RD at Abbott, rotisserie chicken is super high in protein, which is “an essential nutrient used to build cells, tissues, muscles, bones, and organs, and is a key factor when it comes to developing healthy eating habits,” she says.
But with either mechanism, rotisserie chicken is just different from home-roasted chickens, says Kolow. “Rotisserie chicken has a different caramelization, different moisture content, and you'll never have better skin,” says Kolow.
Here's how it's done:
- Preheat the oven. Set the oven to 350°F and remove the chicken from the fridge.
- Add moisture. Once the oven has finished preheating, transfer the chicken to a baking dish.
- Reheat. Put the chicken in the oven and leave it there until it reaches an internal temperature of 165°F.
If you choose to refrigerate a hot rotisserie chicken once you bring it home, remove the meat and store it in a shallow container so it can cool quickly. When the chicken pieces are cool, cover the container or put the meat into sealable plastic bags until you're ready to use the chicken.

The key to baking a great chicken is to cover it for about 60 minutes and then finish it off, uncovered so the skin gets crispy, for another 20-30 minutes or until clear juices run from the meat (the USDA recommends cooking until the chicken is 165 degrees).
Place the chicken into the oven and roast (uncovered) at 450 degrees F for 10-15 minutes. Then reduce the temperature to 350 degrees and continue cooking for about 20 minutes per pound, or until an internal temperature of 165 degrees F.
Roast the chickens at 400 degrees for about an hour and a half, depending on the size of the birds. The way I figure time for this is to take the average weight of one of the chickens (say, 4.5 lbs) and calculate 20 minutes per pound (that would be 90 minutes for a 4.5 lb chicken).
Place your chicken breast side up in an oven safe skillet or roasting pan. Place in your preheated oven and immediately reduce the heat to 375 degrees. Roast your chicken for approximately 20 minutes per pound, or until the temperature of the breast meat registers at 165 degrees.
Remove chicken dish from refrigerator; let stand at room temperature 1 hour. Preheat oven to 200°F. Place dish in oven; roast chicken, skin side up, 2 hours and 45 minutes or until a meat thermometer registers 155°F in meatiest part of breast and at least 165°F in meatiest part of thigh.
Bake a 4-oz. chicken breast at 350°F (177˚C) for 25 to 30 minutes. Use a meat thermometer to check that the internal temperature is 165˚F (74˚C).
Season the chicken generously with sea salt and black pepper. Cover the chicken loosely with foil and roast for 30 minutes. Remove the foil and roast for another 30 minutes. Reduce the temperature to 180C/160C Fan/Gas 4 and roast for a further 25 minutes, or until the chicken is cooked through.
You want to cook your chicken breasts for 18 minutes at 425 degrees. Cooking chicken breasts on high heat for a shorter amount of time will help keep them juicy and delicious.
Place the chicken, breast side down, on a rack in a roasting pan. Roast 15 minutes, then reduce heat to 350 degrees F and continue roasting until chicken is cooked (general rule of thumb for cooking chicken is 15 minutes per pound to cook and 10 minutes to rest).
