This evaporator is rated for 100 – 300 taps. Estimated evaporation rate is 27 – 32+ gallons per hour. It will take 21 gallons of sap to fill the pan 2″ deep.
Trees between 10 and 20 inches in diameter should have no more than one tap per tree. A second tap may be added to trees between 20 and 25 inches in diameter. Trees over 25 inches in diameter can sustain three taps. No tree should ever have more than three taps.
The key to a successful maple syrup operation is controlling production to maintain an acceptable profit margin. The average annual operating cost would be about $2.87 per tap or about $11.50 per gallon of syrup (assuming that four taps are needed to produce one gallon of syrup).

A gallon of medium amber syrup generally retails in the $35 to $45 range. Produce 1,000 gallons and you'll earn around $40,000. During a normal sugaring season, the sap from each tap will yield about 1 quart of syrup. To produce 1,000 gallons, you'll need 4,000 taps.
Maple syrup can be made from any species of maple tree. Trees that can be tapped include: sugar, black, red and silver maple and box elder trees. Of all the maples, the highest concentration of sugar is found in the sap of the sugar maple.

If you are planting sugar maple trees, select a site in full sun for best results. The tree will also grow in partial sun, with at least four hours of direct, unfiltered sun every day. A sugar maple tree growing in deep, well-drained soil is happiest. The soil should be acidic to slightly alkaline.

Maple syrup never spoils! This is due to the high concentration of sugar in maple syrup. Maple syrup should be kept in the refrigerator once it's opened so as to discourage mold from growing on the syrup. Should mold grow on maple syrup, it's safe and easy to remove.
The good news is that the mold that grows in maple syrup is non-toxic (via Epler's Maple Syrup). Instead, remove the mold from the surface of the maple syrup, then heat it to boiling. Let the syrup cool, skim off any remaining floaties, and add it to a clean container. Your maple syrup is safe to eat again!
You have rain water in your sap. The color comes from running down the side of the tree, onto the tap, and into a bucket. Can be brown, yellow, or any mix of colors in between. The low sugar content is because the bucket is likely 50% sap/50% rainwater.
A little cloudiness is fine. It will probably make darker syrup, but may be very tasty grade B. As it gets further along, the yield may drop as some of the sugar seems to get consumed by bacteria. The syrup will be fine but your filters full of gunk.
Maple syrup can be cloudy due to the formation of sugar sand which, while not harmful and perfectly edible, can give your syrup a rougher texture and sweeter taste. This sediment forms during the boiling of the sap to produce syrup and is usually filtered out to give a clear appearance.
If it tastes bad chances are the syrup will taste bad as well. Good luck! Now if you're talking metabolic or buddy sap, you'll know without a doubt you've got it. The smell of it boiling will just about make you sick to your stomach.
So you need a lot of sap to make maple syrup. But sap will spoil (it gets cloudy and off-tasting) if it is left too long in storage. So use your judgment as to when you should start boiling based on these facts. It is possible to boil down sap into partial batches of syrup.
(Syrup finishes at 7ºF above the boiling point of water.
