How to Dry Rice
- Spray a baking sheet lightly with nonstick cooking spray.
- Place the cooked rice onto the center of the oiled bakingsheet.
- Spread the rice out on the baking sheet with a spatula.
- Place the baking sheet in the freezer, and set the timer for 30minutes.
- Remove the rice from the freezer when the timer goes off.
Chinese cooks normally use soybean oil, vegetableoil, or peanut oil, all of which have a high smokepoint. Peanut oil usually has a pleasant nutty flavor and issuitable not only for stir-frying but also fordeep-frying. Canola oil, which has a high smoke pointbut a neutral flavor, is also a good choice.
You don't have to rinse and soak, but soakingrice overnight, draining your batch, then rinsing it beforeyou cook helps make rice more digestible. This method opensup the grain up for better water absorption and speeds upcooking. It also reduces the build-up of arsenic and phytic acid(toxins).
