What's The Difference between a Tom and a Hen? Hens are female and Toms are male. On average, Toms are larger, so if you're looking for a turkey over 18 pounds, you will most likely end up with a Tom. If you are looking for a little more meat and less bone waste, look for a Hen.
If you've seen a male wild turkey, you likely noticed a shock of long, dark, fibrous bristles hanging from its breast plumage. That's called a beard, and it's made of modified feathers. Male turkeys, called gobblers – and some female turkeys, called hens – have beards.
That thing is called a snood. And it's there to let the other turkeys know that its owner is kind of a big deal. When a male turkey—known as a tom—wants to mate, he faces two hurdles. Male turkeys have pink and red faces, and when aroused, red, white and blue heads. Female turkeys have blue-gray heads, occasionally with some red splotches.
Females have bare skin on the head and are dark brown overall, with a coppery sheen to the rump and tail. When open, the wings show white barring.
How Small of a Turkey Can You Buy? Frankly, even a small turkey is fairly sizable; it's never going to be like cooking a Cornish game hen. Most “small” turkeys range from 10 to 12 pounds, though you may be able to find one smaller. Kroger grocery store even carries a five-pound bird.
