The proper name for the cheese is spelled as Red Leicester, or Leicestershire, but it comes out sounding like "Red Lester when they say it.
Cheddar cheese is a relatively hard, off-white (or orange if colourings such as annatto are added), sometimes sharp-tasting, natural cheese. Furthermore, certain cheeses that are more similar in taste and appearance to Red Leicester are sometimes popularly marketed as "red Cheddar".
Discard it immediately. The pink color comes from some kind of mold and since cream cheese is soft the mold has extended its tendrils into the entire cheese. Other bad colors on cheese are blue or green, but if the cheese is hard you can trim that off if you give it a good margin.
Melts well. Bit tricky to slice owing to its crumbly nature.
But it is natural in so far as the colour comes from a harmless vegetable colourant – Annatto. Annatto comes from the seeds of the Achiote tree (Bixa orellana), which is native to South America and the Caribbean. This colours the curds and gives the orange and red cheeses their hue.
Today, the color most often comes from annatto, a food coloring and condiment made from the seeds of the achiote tree, and/or paprika. Since the color doesn't noticeably affect the flavor or texture of the cheese, pick whichever cheddar you prefer.
Pros: An excellent source of calcium, which is important to help guard against osteoporosis. Wensleydale is also a good source of vitamin B2, a water-soluble vitamin which helps the body release energy from protein. It also contains vitamin B12 for people who don't eat meat.

Double Gloucester cheese is made in many parts of the UK both on farms and in large dairies. It has a characteristic light orange hue given by the addition of annatto to the milk. Annatto is an orange-red condiment and food colouring derived from the seeds of the achiote tree.
Double Gloucester has a creamy texture. Some people like to eat it with apple pie. I would not choose it for a savoury dish. Red Leicester is a better choice but, if you can get it, Gruyere would be perfect.
