Not Diluting the ConcentrateWhen you're ready to drink, dilute it with water (adding cream or alt-milks will also cut the intensity). Perhaps I shouldn't admit this, but three words run through my head whenever I make cold-brew coffee: What. A. Waste. To put it bluntly, cold brew is a bean hog, demanding twice the amount of grounds (and often more) than your typical batch of hot-brewed coffee.
You brew for too long.Simply brewing for too much time can lead to over extracted coffee. The grounds release their yummy flavors, but if you don't stop the brewing, they'll keep releasing those bitter chemicals. For example, if you brew a french press for six minutes, you may find yourself with over extracted coffee.
Cold brew coffee (not the concentrate) has a very light color and if brewed well, the taste is reminiscent of a tea. It should be very light, fruity, aromatic. The color will be a reddish brown and slightly translucent.
The beauty of Cold Brew is you really don't need anything fancy, just time. Stick with a coarse grind. Using a coarser grind will make the filtration process easier and your coffee taste far less bitter. Grinding too fine can heat up the grounds, which can negatively affect your cup.
The Concentrate Tastes Bitter or SourIf you find your cold brew to be a little bitter, it's likely that the concentrate was over extracted by too much time or too fine of a grind. For immersion, you can reduce the brew time or use a coarser grind. For slow drip, try a coarser grind.
As it turns out, on a large scale, stirring later in the brew can cause the coffee to prematurely sink and compress the grounds leading to a negative outcome—weak cold brew. From this we have concluded that a good stir at the beginning of the immersion process should be sufficient for consistently delicious cold brew.
