The still was developed in 800 AD by the Arab alchemist Jabir ibn Hayyan. The word 'alembic' is derived from the metaphoric meaning of that which refines; which transmutes, through distillation. Perhaps the most widely known version of a double thumper (retort) system is the alcohol still used for making traditional Jamaican-style rum. A REFLUX still does these multiple distillations in one single go, by having some packing in a column between the condensor & the pot, and allowing some of the vapour to condense and trickle back down through the packing. How Does a Column Still Work? A column still has partitions, or perforated plates, that set up chambers within the still. The mash enters near the top of the still and immediately starts to sink. The mash, at this point, is still low in alcohol, like a beer or wine.
Procedure:

- Heat water to 165 °F.
- Turn off heat source when you reach 165 °F and immediately stir in 8.5 pounds of Flaked Corn Maize.
- Stir mixture continuously for 7 minutes.

Let the mash work as long as the head, or foam, seems to be rising, but it will ferment out and go sour, so about 10 to 14 days is maximum, depending on temperature. Yeast acts more slowly at lower temps. Do not invite friends over while the mash is working.
Without copper, the distillate will smell and taste sharp and unpleasant. However, the still doesn't need to be made of copper. There is nothing particularly magical about the pot or column itself being made of copper. As long as copper metal is present somewhere in the still, the beneficial reactions can occur.
It's perfectly legal to own a still, and you can even use it, as long as you're not making alcohol – so, you can make essential oils without a permit, or perfume, or distilled water. According to federal law, making beverage alcohol at home is illegal, plain and simple.
