Like most fruits, dried cherries are good for helping you reach your daily recommended values of vitamins and minerals. They are an especially abundant source of vitamin A — more specifically, provitamin A, the most common variety of which is beta-carotene.
Add dried cherries to winter fruit salads and compotes, or use in place of sultanas or raisins in baked fruit puddings such as apple pie or peach cobbler. They also taste good mixed with dried blueberries and dried cranberries, as well as white chocolate.

Here's how I did it:
- Cut the fruit into thin slices.
- Wash and dry the rotating plate of the microwave, as you'll be placing your fruit directly onto it.
- Put the fruit slices onto the microwave plate, giving them some breathing room (at least an inch or two).
- Set the timer for 30 minutes!
- But not so fast!
Simply simmering them for a short time in some reduced organic apple juice takes the edge off their acidity and turns them into a lovely sweet and sour treat once dried. The remaining apple and cherry syrup is wonderful drizzled over ice cream or porridge.
You can dry frozen strawberry or cherry halves straight up, but I have found that tossing the cut fruit with a coating of sugar, and allowing the mixture to sit in the fridge for a day before putting the fruit in the dehydrator, vastly improves the overall quality of the dried fruit.
Drain canned, sliced (not diced) pineapples and maraschino cherries on paper towels. Place pineapples rings on dehydrator trays with a cherry in center of each. Dry 8–10 hours at 135°. Off-brand slices with smaller center holes work best.
Bring the water and sugar to a boil and stir continuously until sugar dissolves. Gently pour the hot water-sugar mix over the cherries, also leaving a half-inch of room at the top. Seal tightly and store in the fridge. Use within one month.
Instructions
- Preheat oven to 200 degrees.
- Remove the pits and stems from the cherries, and space them evenly on the wire rack.
- Place in the oven for six hours.
- Remove and allow to cool completely on the wire rack.
- Transfer for an airtight container to store.
Cherry drying, explainedThe explanation is simple: During the last three to four weeks before harvest, cherries are susceptible to damage from rain. Moisture on the cherries can also cause mold and mildew. Any of these things can make the cherry unsalable.
Place in the freezer for a couple of hours until solid, then put the frozen cherries into a container and keep frozen until needed. Freezing them in a single layer first, means they don't freeze into a solid mass in the container making it easier later to get only the amount needed for a recipe.
How to Freeze Cherries
- Step 1: Wash your cherries.

- Step 3: Pit the cherries.
- Step 4: Spread pitted cherries in a single layer on a cookie sheet lined with wax paper.
- Step 5: Place cherries in freezer.
- Step 6: Remove from freezer and place in bags.
Sour cherries are meant for cooking.
- Serve them iced for dessert.
- Cook them with lemon juice and sugar.
- Pair fresh cherries with goat cheese and thyme.
- Make impromptu cherry ice cream.
- Or turn that into a cherry milkshake.

Sweet cherry wines are more full-fruit flavored and bold, sometimes even fortified with extra alcohol to make a port or liqueur style of wine. Dry cherry wines are like autumn leaves; putting the underlying notes, flavors and character of the fruit on display for the nose and palette.
Dry the Cherries
- Dry at 135 degrees (the fruit recommendation on my food dehydrator) for 8-10 hours.
- Check fruit. Remove any that are fully dried (pliable, but not squishy – you pretty much have to touch each one to know, unless you can see they are still wet-looking).
- Dry 2-6 more hours or until all the fruit is dry.
A single cherry yields roughly 0.17 grams of lethal cyanide per gram of seed, so depending on the size of the kernel, ingesting just one or two freshly crushed pits can lead to death.

One of the first decisions when it comes to cooking fresh cherries is whether to pit or not to pit the fruit. It depends somewhat on the energy of the cook, but, aside from labor, the disadvantage to pitting or stoning is that some recipes just don't come out right after the pits or stones have been removed.
Stem a cherry and place it on top of your empty bottle, with the top facing up. Hold on to the cherry as you place your chopstick above the cherry, where the stem used to be. Push down until you can feel the pit. Keep pushing until the pit goes through the bottom.

Can I freeze cherries with pits? You can, although we highly recommend pitting cherries before freezing, just for convenience's sake. To leave your stem intact and your fruit nice and plump, you will pit the cherry from the bottom.

The seeds (also known as stones, pits, or kernels) of stone fruits like apricots, cherries, plums, and peaches do contain a compound called amygdalin, which breaks down into hydrogen cyanide when ingested.
All parts of the cherry tree are toxic except the fruit. Poisoning is not expected when the hard pit is swallowed whole. The body does not digest the pit so it just passes through the gastrointestinal tract and is excreted in the stool. The main concern with young children ingesting the pit would be the choking hazard.
You can grow cherries at home using pits from locally grown cherries, but fruit production will take longer using this process.
