Many of the words that have the "o" sound (like in coffee) are pronounced with an "aw" sound. So the word dog, for example, would sound like "dawg", and "coffee" would sound like "cawfee."
"You all" is common throughout the country, not just California. "Ya'll" is the (mainly) southern and Texan contraction of "you all" (and Oklahoman, and anyone else who cares to use it). "you all" is not the same as the Southern "y'all". I've heard some people say "you all have to do it."
Because in SoCal, we have so many damn freeways and they all have personalities. Each freeway is its own world and its just not part of the culture here to say "I-405". Also it could be a reference to the experience of each freeway as opposed to the freeways themselves.
