When you delete an Ultimate team it's a permanent change so unfortunately it's not possible to return the team. You would need to start with your fresh team that should have been created after the deletion.

If you are on PC/Console then you will not lose any progress, as your team is stored on our servers. If you're using Mobile, then your team will only be saved if it was linked to a Facebook account.
